Ingredients:

500 g of broad beans (white beans from Asturias)

200 g chorizo ​​​​​​(preferably Asturian)

200 g black pudding (Asturian black pudding)

200 g bacon or lard

1 onion 2 cloves of garlic 1 bay leaf 1 sprig of thyme

Salt and pepper to taste

 

Preparation:

Soak the beans: The day before, put the beans in a bowl with water and let them soak for at least 12 hours.

Prepare the ingredients: Peel and chop the onion and garlic. Cut the chorizo, black pudding and bacon into large pieces.

Cook the beans: In a large saucepan, add the drained beans and enough cold water to cover. Bring to a medium heat and when it starts to boil, skim off any foam that forms on the surface.

Add the sausages: Add the chorizo, black pudding and bacon. Also add the onion, garlic, bay leaf and thyme. Season with salt and pepper.

Simmer: Cook over very low heat for about 2 to 3 hours, stirring occasionally. The beans should be tender and the broth thick. If necessary, add more water during cooking.

Adjust the taste: At the end of cooking, taste and adjust the salt and pepper if necessary.

Service: Serve piping hot, accompanied by crusty bread.
