Neu del Cadí cheese takes its name from the snow that covers the mountains of the Cadí-Moixeró Natural Park, a magnificent setting where the milk used to make it is produced. Produced by the Cadí cooperative from pasteurised cow’s milk sourced from farms in the Pyrenees, this cheese stands out for its quality, creaminess and balance.

It has a white rind covered in mould, characteristic of soft cheeses, which protects a creamy, smooth texture that melts in the mouth. As it matures, its texture becomes creamier and it develops delicate aromas with lactic and buttery notes, as well as subtle hints of mushrooms and nuts.

Its flavour is balanced and elegant, with a moderate intensity that makes it particularly versatile. It can be enjoyed on its own, accompanied by artisan bread, nuts or mild jams, and pairs perfectly with fruity white wines, sparkling wines or light craft beers.
