Nieto Martín’s spicy Iberian ‘Chorizo Cular’, made from acorn-fed pigs, is a variation on one of the brand’s best-known sausages, produced in Guijuelo using traditional methods.
It is made from select cuts of Iberian pork from pigs that have been fed acorns during the Montanera season, giving it a high-quality marbling and a deep, balanced flavour. In this variant, the marinade contains spicy paprika from La Vera, which imparts a more intense flavour and a characteristic heat without overpowering the quality of the base product.
Once the chorizo has been stuffed into a natural pig’s intestine, it undergoes a slow curing process in natural drying chambers, where it develops its complex aroma, firm texture and intense red colour, marbled with fat.
On the palate, it offers a harmonious balance between the mildness of acorn-fed Iberian pork, the smoky notes of the paprika and a gentle, lingering heat that unfolds in the finish, lending character to the whole without being overpowering.
