Nieto Martín’s acorn-fed Iberian chorizo in cular casing is one of the most iconic products of Guijuelo’s sausage-making tradition. It is made from selected cuts of Iberian pigs fed on acorns during the montanera season, which gives it high-quality marbling as well as a distinctive, intense and balanced flavour.
The meat is marinated according to the house’s traditional recipe with La Vera paprika and a selection of natural spices, before being stuffed into a natural casing from the hindquarters, which gives it its characteristic shape and ensures a slow and uniform curing process. The curing process in natural drying rooms allows the aroma and complexity to develop fully, with a perfect balance between sweet, smoky and slightly spicy notes.
The result is a chorizo with a firm yet juicy consistency, a clean cut, an intense red colour and streaks of fat that give it a rich texture on the palate and a deep flavour. Ideal for serving in thin slices as an appetiser, on Iberian ham platters or accompanied by artisan bread and red wines.
